Also known as ‘Nuoc Cham’ in Vietnamese, this is the quintessential sauce of the three regions of Vietnam, made with a concoction of flavours that excite and satisfy all sweet, savoury and sour taste buds equally. PoppySmack’s version provides a unique blend of fresh garlic, chilli, herbs and zesty citrus rind. It’s best served as a finishing sauce for grilled/fried/steam fish, a dipping sauce for rice-paper rolls or dumplings, or a dressing for everyday garden salads or for an Asian prawn coleslaw. When serving a bowl of lemongrass beef/chicken noodle salad, this is the best accompany sauce for the dish.
